This is a great recipe now that Fall is here! We have more of a need for grounding & foods. Move away from boring mashed potatoes and try this colorful and delicious organic root veggie mash below:
INGREDIENTS:
4 medium purple carrots (or any carrots)
2 medium Japanese Sweet Potatoes
4 medium Parsnips
1 bunch Cilantro
1 Lime
1 teaspoon Olive Oil
Pink salt to taste
PREPARATION:
Cut all the vegetables into small triangles or cubes. Add them to a steamer. Steam until soft. If you want a crispier mash take the the vegetables out of the steamer and saute on low heat in olive oil. If you are sautéing on higher heat, use coconut oil instead. Chop up the cilantro finely. Mix the cilantro into the mash. Squeeze lime and add salt taste. Eat while hot. Serves 2.
